Achar Fish

Well another nyonya dish to showcase. I have learnt this dish from my mum, it is called Achar Hu or Achar Fish. It has a beautiful aroma of turmeric, garlic and ginger on fried fish. This dish taste good overnight as the fried fish has been well soaked with the fried ingredients like turmeric, ginger and garlic. To add a little color, chilly has been added. As all of us is aware that turmeric is a healthy stuff and it provide us wonders.

I just love the aroma of fresh turmeric, it is refreshing and gives the dish a beautiful color and flavour. This is a beautiful dish where we only get to eat during nyonya baba wedding luncheon during my childhood days. As for now, we can have it anytime so long as we know how to cook it or frequently we can order it at Nyonya Restaurant...though it can be a little commercialised the way it is cooked.



All you need :
  • small fish or fish cutlets
  • big piece fresh turmeric
  • big piece young ginger
  • 1 clove garlic
  • 2 pc red chilly
  • 2 Tbs rice vinegar
  • salt n sugar to taste
Simple Process :
  • Fry the fish and set aside
  • Cut the turmeric, ginger, garlic into thin slices
  • Heat 1/2 cup oil and saute the ginger strips till golden brown, set aside
  • Using the same oil, saute the garlic till golden brown - set aside
  • Using the same oil, saute the turmeric till it is aromatic
  • Add the rice vinegar, salt, sugar to taste , allow it to cool
    * for health purposes, I have add a little water to the mixture as I do not use too much oil, the original recipe is without water added
  • Next pour it over the fried fish and garnish with the fried ginger and garlic, store for a few hours before serving

  1. Do you mean we can keep fih overnight before eating? DO we need to keep it inside refrigenator?

  2. Hi there, if you were to cook it in the evening, then just leave it un-referigerated, this Achar Fish would not turn bad. If you were to cooked it in the morning, I suggest you referigerate by evening and take out the next morning and allow it to cool to room temperature. Enjoy cooking..
