Cool, look at this yummy simple and delicious brinjal dish. This is just another way of preparing this high in potassium fruit - Brinjal or Eggplant. It is simply cooking with fermented soya beans and minced meat and garnish with spring onion. I have removed the beautiful purple skin (as shown below, new photo with skin, post edited on 1 Sept) for easy digestion thus the colour of the dish may not be so appealing, but it just taste so good with steamed rice. Try it.. :))
All you need :
- 2 long brinjal - peel the skin and cut into small strips
- some minced meat
- 2 Tbs fermented soy beans
- 5 pips garlic - chopped
- 1 sprig of spring onion
- 1 Tbs cooking wine
- 1 Tbs oyster sauce
Simple Process :
- Heat the wok with a little oil, saute the garlic and fermented soy beans till aromatic
- Add in the minced meat and stir fry till meat turns white
- Add in the brinjal and a little water and allow it to simmer over low heat
- Stir occasionally till brinjal has soften, add the oyster sauce and cooking wine
- Stir well, add in the spring onion and ready to serve
